Wow, time flies! I realize I haven’t posted anything recently, sorry for leaving you hanging!
I’m working on something really big right now, but I won’t be ready to tell you about it for another 8 weeks. But seriously…stay tuned!
In the meantime I’m going to work on getting a bunch of posts up about what I was doing in March.
Lets start with my “pinch of this, handful of that” granola that the hubs and I can’t get enough of right now.
Doing: Homemade Granola
3 cups Rolled Oats (good quality, thick, organic ones if you can swing it, matter of fact all the ingredients should be organic if possible)
1 cup Raw Pumpkin Seeds
1 cup Raw Sunflower Seeds
1 cup Raw Sliced Almonds
Optional: 1 cup other nuts (walnuts, pecans)
1 cup Coconut Flakes
1 cup Coconut Oil
1/2 cup Maple Syrup
Optional: 1/4 cup brown sugar (depends on how sweet/unprocessed you’d like your granola to be)
1 Tablespoon Vanilla extract
2 Tablespoons Cinnamon
1/4 teaspoon Salt
Optional: dried fruit
Mix all of the dry components together. Mix melted coconut oil, syrup, sugar, vanilla, salt, cinnamon together. Pour over the dry ingredients and toss together really well. Let the mix sit for 30 minutes before re-tossing and spreading on a baking tray. Bake at 350°F for 30 minutes or until slightly golden. Allow to cool completely before storing in an air-tight container. Mix in dried fruit if desired.
This granola doesn’t really stick together super well, so I don’t recommend it for “bars” but it is excellent with homemade yogurt.
