My day spent canning tomatoes was a bust. Seriously, I got 6 jars of plum tomato halves canned and lost a lot of sweat in the process, only to find the next day that all of the jars had siphoning issues. Looks like someone packed those jars a little too tight. Blast! So I spent the next morning pureeing and cooking those same tomatoes down into sauce and came out with 8 pints of tomato sauce – plain. Oh well, all’s well that ends well, I suppose.
In other news, I’m getting a bushel of peaches this weekend and will be canning peaches next (and still finishing off the case of plum tomatoes from the last weekend). In the heat of the moment (and I do mean heat) canning feels like a never ending task. But I keep trying to look ahead, when I’m introducing solid foods to my boy and will have my own preserved foods to offer him. That thought alone makes it worth it. I also like the buy today and eat tomorrow principle – it will be nice to have so much to eat when we are living on one income, it should help to keep the grocery bill down in Feb/Mar/Apr.
I met a gal who is selling cheese curd today. I’m going to try a sample she gave me and see what can be done with it. I’m dreaming of fresh cheese in my future, and maybe even a source for raw milk in the near future…..we’ll see.
