Sausage and Zucchini Bake (or casserole)
3-6 Zucchini (depending on their size)
1 jar Spaghetti Sauce (or make your own tomato sauce)
Mozzarella – shredded
Start by sauteing italian sausage. Slice zucchini thinly and put in a baking dish. Add a jar of tomato sauce to your sausage, just to heat and get the browned bits off the bottom of the saute pan. Pour the sauce over the zucchini and mix it up. Top with cheese. Bake until brown and bubbly.
This night we had a little roasted beets and salad with it. It makes an excellent lunch the next day too. Need carbs? Garlic bread goes great with this.
