Who would have thought we’d have 80 degree weather in the middle of March? Stranger things have happened I’m sure, but the Almanac was wrong about this winter.
Today my mommy friend N and I went for a hike in a local park with our boys. I got sunburned and the babe got sweaty in his carrier and it’s only March. After our walk we sat outside, in the shade to stay cool, at a cafe and I had an iced latte. Right now we’ve had the windows open and the ceiling fans on for the past two days. I’ve put baby G in summer suits to keep him from overheating. And tonight he’s only sleeping in a onsie rather than fleece PJs. Seriously – it feels like June.
Two nights ago we grilled out with the brother in law. We enjoyed some fantastic taco salads with grilled steak. These weren’t you ordinary taco salads either. I wish I had taken pictures, they looked as good as they tasted. Beautiful greens, grilled steak, homemade salsa, jicama slaw, avocado, queso fresco, grilled onion/pepper/poblano, cilantro and lime. Mmmm. Best of all dinner was low glycemic and gluten free, it’s a beautiful thing! I didn’t think I’d find ourselves back on a gluten free diet so soon. I’m glad though that we’ve been through it before so it is more old hat than new endeavor. So far we’ve had good success with some old favorites like my zuchinni and sausage bake. And we’ve found a few new favorites like creamy chicken and wild rice soup or sausage and lentil stew. (who knew it’d be too hot to eat soup so soon?)
Tomorrow is the baby’s three month ‘birthday’ and we’ll have his three month ‘photoshoot’. I’m hoping to get his latest posted shortly. In the meantime I hope you’re enjoying this weather as much as we are!
